Roasted Potatoes with Cilantro Vinaigrette

Ingredients:

Olive oil

Kosher salt

Honey gold potatoes

Vinaigrette ingredients:

Olive oil

Lime

Garlic

Maple syrup

Red wine vinegar

Cilantro

Preheat your oven to 425 degrees. Place an empty sheet pan in the oven. Cut the potatoes into 1-inch chunks.

In a large bowl, combine the diced potatoes, olive oil, and kosher salt. Toss until well coated.

In a small food processor, combine the cilantro, lime juice, olive oil, garlic clove, maple syrup, red wine vinegar, and salt.
