Soft & Chewy Oatmeal Cookies

Ingredients:

Sugar

Rolled oats

All-purpose flour

Baking soda

Egg + yolk

Brown sugar

Unsalted butter

Preheat oven to 350 degrees. In a large bowl, beat the butter, sugar, & brown sugar until light & fluffy.

Add the egg and the yolk to the butter mixture and beat until combined. Don't overmix.

Add the oats, flour, baking soda, cinnamon, and salt. Beat until a cookie dough forms.

Use a small portion scoop to scoop 6 cookies onto a parchment lined sheet pan.

Bake for 11 minutes or until the edges look baked and the centers look underbaked.

Let the cookies cool for at least 5 minutes before you try to transfer them.
