Almond Flour Chocolate Chip Cookies
These cookies have crackled tops, soft centers and taste just as good as regular chocolate chip cookies.
Stand Mixer with the Paddle Attachment
Also equal to 8 tablespoons or 4 oz.
Brown sugar, packed
cup + 1 tbsp
Semisweet Chocolate Chips
Preheat the oven to 350 degrees Fahrenheit and line a sheet pan with parchment paper or a silicone baking mat.
Cream butter, brown sugar and sugar on medium speed until light and fluffy - approximately three minutes.
Add the egg and beat until incorporated, scraping the bowl when necessary.
Add almond flour, baking soda, and salt to mixture and beat on low until cookie dough forms - scraping the bowl to make sure all is incorporated.
Fold or beat in the chocolate chips.
Using a medium sized portion scoop, scoop 6 cookies onto a pan and bake until the edges are golden brown - approximately 13 minutes for big cookies.
If you are making smaller cookies adjust the time as necessary. When I used a smaller scoop I only baked the cookies for 11 minutes.
