These oat flour peanut butter cookies are a breeze to make with these easy-to-follow steps!

Ingredients:

Unsalted butter

Creamy peanut butter

Sugar

Brown sugar

Egg

Oat flour

Baking soda

Kosher salt

In the bowl of a stand mixer, combine the butter, sugar, peanut butter, and brown sugar.

Beat until light and fluffy, about 3 minutes. You can use a bowl and a hand mixer if you prefer.

Add the egg and beat until just combined. Use a spatula to scrape down the sides of the bowl.

Add the oat flour, baking soda, and salt to the butter and egg mixture. Beat until a cookie dough forms.

Use a small cookie scoop to scoop the oat flour cookie dough onto a sheet pan. Give them space to spread.

Bake for 10 to 12 minutes, or until the edges are golden brown but the middles look slightly underdone.
