These oat flour oatmeal cookies are a breeze to make with these easy-to-follow steps!

Ingredients:

Unsalted butter

Sugar

Brown sugar

Egg + yolk

Vanilla extract

Oat flour

Rolled oats

Ground cinnamon

Baking soda

Kosher salt

In the bowl of a stand mixer, combine the butter, sugar, and brown sugar.

Beat with the paddle attachment until light and fluffy, about 3 minutes. Alternatively, you can use a large bowl and a hand mixer.

Add the egg, yolk, and vanilla extract to the butter mixture. Beat until combined.

Add the dry ingredients to the butter mixture. Beat until a cookie dough forms.

Use a small cookie scoop to scoop 8 cookies onto a parchment lined sheet pan. Give the cookies space to spread.

Bake for 11 minutes or until the edges are golden brown but the middles look light and underbaked.

Let the oatmeal cookies cool on the sheet pan for at least 5 minutes before you transfer them to a wire rack.
