COCONUT FLOUR OATMEAL COOKIES

Ingredients:

Egg

Brown sugar

Unsalted butter

Coconut flour

Rolled oats

Kosher salt

Baking soda

Sugar

In a large bowl, cream together the butter and both sugars for 3 minutes until light and fluffy.

Add the egg and beat until incorporated. Scrape down the sides of the bowl.

Add the coconut flour, rolled oats, baking soda, and salt. Beat until a cookie dough forms.

Use a small sized cookie scoop to scoop cookies onto pan at least 3 inches apart and bake for 11 minutes or until the edges turn golden brown.
