Chipotle Black Bean Burgers

Ingredients:

Breadcrumbs

Cheese

Egg

Garlic

Black beans

Lime

Spices

Chipotle pepper

Bell pepper

Onion

Rinse and drain the black beans. Bake for 18 minutes at 350 degrees to dry them out.

Sauté the peppers and onions in a hot skillet with olive oil for 5 minutes.

Add the spices and garlic, then cook for another minute. Remove from the heat and set aside.

In a food processor, combine half the black beans, half the red pepper mixture, egg, chipotle, and lime.

Pulse until a chunky paste forms. It won't be completely smooth. Transfer to a large bowl.

Add the remaining beans, red peppers, cheese, and breadcrumbs. Stir well with your hands.

Form the mixture into 6 patties about 3 1/2 inches wide.

Sauté 3 patties at a time in a hot skillet for 5 to 6 minutes per side.  

Assemble and enjoy with chipotle mayo!
