For the Jam

Add strawberries, lemon juice & sugar in a small sauce pan on med high heat.

Stir occasionally until strawberries break down & mixture reduces and thickens. Set aside.

For the Muffins

Preheat oven to 350 & spray 6 cavities in muffin tin with cooking spray.

In a large bowl stir together vegetable oil & sugar.  Add the egg. Stir together well.

Add the gluten free flour, baking powder, baking soda &  kosher salt.

Stir until a thick batter forms.  Add milk and mix until smooth.  Stir in diced strawberries & lemon zest.

For the Muffins

Scoop batter into muffin tin. Top each muffin with tsp of  jam mixture.  Swirl with a toothpick.

Top with sliced almonds.  Bake for 30 minutes.
