Gluten Free Blackberry Muffins

Ingredients:

Whole milk

Sugar

Baking soda

Baking powder

Canola oil

Blackberries

Gluten-free flour

Egg

In a large bowl or the bowl of a stand mixer, beat the sugar and oil until combined.

Add the egg and beat again until incorporated.

Add the gluten free flour, baking powder, soda, and salt to the mixture and beat. Add the milk and beat until smooth.

Fold in the blackberries with a spatula. Don't stir too much or the batter will turn purple.

Scoop the gluten free muffin batter into six cavities of a muffin tin. Top each one with streusel topping.

Bake at 350 degrees for 28 minutes or until a toothpick comes out clean.
