Roasted Honey Gold Potatoes

Ingredients:

Olive oil

Honey gold potatoes

Kosher salt

Cut the honey gold potatoes into 1 inch chunks. Preheat the oven to 425 degrees.

Transfer them to a bowl, and add the olive oil and salt.

Toss the potatoes until well coated with the oil and salt.

Dump the potatoes onto the hot sheet pan and roast for 30 minutes.

Blend the ingredients for the cilantro vinaigrette until creamy.

Drizzle the vinaigrette on the hot potatoes and top with cheese!
