Spinach Omelette

Ingredients:

In a small bowl, combine the parmesan & cream cheese.

Sauté the garlic and spinach in a nonstick skillet until wilted.

Mix the sauteed spinach with the cream cheese mixture.

In the same skillet, melt the butter over medium heat.

Pour in the eggs and let the edges set for a second.

Use a spatula to push the eggs toward the center of the pan & let the runny egg move to the edge.

Scoop the spinach filling into the center of the eggs.

Use a spatula to fold the sides over the spinach filling.
