- 3 small ripe bananas (18 ounces) peeled and sliced
- ½ cup brown sugar
- ¾ teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- 1¼ cup water
Combine all the ingredients in a medium saucepan and stir to combine. Bring the mixture to a simmer over medium heat.
Once the mixture reaches a simmer, cook for 7 minutes, stirring occasionally so the bottom doesn't burn.
Pour the mixture into a fine mesh sieve over a bowl. Use a spatula to press the mixture into the sieve to get all the syrup you can. There will be a lot of banana pulp leftover.
Toss the banana pulp or use in a different recipe and transfer the banana syrup to an airtight container or jar.
Store in the fridge for 1 week. To make a latte, add 1 to 3 tablespoons of banana syrup to a cup, then top with espresso and steamed milk.
