- 4 cups cauliflower florets (11 ½ ounces)
- ¼ cup water
- 2½ tablespoons unsalted butter
- 1 garlic clove minced
- ½ tablespoon fresh lemon juice
- 1 tablespoon grated parmesan
- ¼ teaspoon dried oregano
- ¼ teaspoon kosher salt
If the cauliflower florets are very large, cut them into smaller florets before you measure them.
Place the cauliflower florets in a large microwave-safe bowl. Pour the water over the cauliflower. Cover the bowl with a microwave-safe plate. It should cover the entire top of the bowl.
Place the bowl into the microwave and microwave for 3 minutes. Use a slotted spoon to stir the cauliflower and then cook for 2 ½ more minutes. The cauliflower should be tender yet firm, but not mushy.
Remove the cauliflower from the microwave and remove the plate from the top.
In a medium bowl, combine the unsalted butter and minced garlic. Microwave until the butter is hot and melted, but not overflowing, about 1 minute. Watch it to make sure it doesn't overflow!
Add the kosher salt, oregano, lemon juice, and grated parmesan to the melted butter. Stir to combine.
Drain any excess liquid from the cauliflower. Add the melted butter mixture and stir to coat. Serve with a sprinkle of grated parmesan and kosher salt.
