Maple Butter Microwave Carrots

These microwave carrots cook up in under 10 minutes, staying perfectly tender without turning mushy. Tossed in melted butter and finished with a bit of maple syrup, they’re a quick, sweet, and flavorful side dish.

- 1 pound baby carrots
- ¼ cup water
- 1½ tablespoons unsalted butter
- 1 tablespoon maple syrup
- ¼ teaspoon kosher salt
Place the carrots in a large microwave-safe bowl. Pour the water into the bowl with the carrots.
Top the bowl with a large microwave-safe plate so it covers the entire bowl. Microwave for 4 minutes.
Carefully remove the bowl from the microwave and stir the carrots with a large spoon.
Recover the bowl with the plate and microwave for 4 and ½ more minutes. Remove the bowl from the microwave and keep it covered.
In a small bowl, add the butter. Heat it in the microwave until melted. Add the maple syrup and kosher salt to the melted butter and whisk to combine.
Remove the plate from the top of the carrots. Test a carrot for doneness with a fork. If the carrot isn't done yet, place the plate back on the bowl and let the carrots steam for another minute.
Remove the plate from the bowl. Drain any excess water from the carrots. Pour the maple butter mixture over the carrots. Stir well to coat.
Serve immediately with a sprinkle of kosher salt.
