Thai Turkey Lettuce Wraps

These turkey lettuce wraps with a Thai spin make the perfect weeknight meal. Crunchy lettuce and red bell pepper, peanut sauce and roasted chili paste give these lettuce wraps a ton of flavor.

For the peanut sauce:
- ¼ cup peanut butter
- 1 tablespoon fresh lime juice
- 1 tablespoon tamari soy sauce
- 2 tablespoons water
- 2 teaspoons honey
For the pineapple salsa:
- 1 red bell pepper, small diced (about 1 cup)
- 1 cup small diced pineapple
- 2 teaspoons minced cilantro
- ½ lime, juiced
For the wraps:
- ½ lime
- 2 tablespoons Tamari Soy Sauce
- 2 tablespoons water
- 1 tablespoon Roasted red chili paste
- 1 tablespoon Honey
- 1 teaspoon ginger paste
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- 1 pound ground turkey
- Bibb, butter or iceberg lettuce for wraps
For topping: (optional)
- roasted cashews
- fresh cilantro
For the peanut sauce:
Combine peanut butter, lime, soy sauce, and honey and stir together slowly. Stir in water to thin. Set aside.
For the wraps:
Heat a large nonstick skillet over medium-high heat, then add a drizzle of olive oil.
Combine the lime juice, soy sauce, water, chili paste, honey, ginger paste, garlic and olive oil in a small bowl and stir together.
Add the ground turkey to the hot pan and cook until browned and mostly cooked but not all the way. Add the soy sauce mixture to the pan and stir well. Cook until the sauce thickens and the meat is cooked through. Remove the pan from the heat.
Assemble the wraps. First place the lettuce on the plates then add meat, peanut sauce and a generous helping of pineapple salsa! Top with roasted cashews and fresh cilantro.
