tri-color quinoa

unsalted butter

Instructions
In a medium saucepan, combine the vegetable stock, butter, minced garlic, and tri-color quinoa.
Bring the mixture to a boil over medium-high heat. Reduce the heat to medium-low and cover the pot with a lid.
Let the mixture simmer until all the liquid evaporates, about 19 minutes. Remove the saucepan from the heat and let it sit for 5 more minutes.
Remove the lid from the pot and fluff with a fork. Let the quinoa cool for a few minutes before serving. Sprinkle with kosher salt and enjoy!

*Be sure to buy a brand that says it's been rinsed!
