Ingredients
  

  • 1 cup tri-color quinoa prerinsed*
  • 2 cups vegetable stock
  • 1 garlic clove, minced
  • 1 tablespoon unsalted butter (optional)
  • kosher salt

Instructions
 

  • In a medium saucepan, combine the vegetable stock, butter, minced garlic, and tri-color quinoa.
  • Bring the mixture to a boil over medium-high heat. Reduce the heat to medium-low and cover the pot with a lid.
  • Let the mixture simmer until all the liquid evaporates, about 19 minutes. Remove the saucepan from the heat and let it sit for 5 more minutes.
  • Remove the lid from the pot and fluff with a fork. Let the quinoa cool for a few minutes before serving. Sprinkle with kosher salt and enjoy!
