For the salad:
- 5 ounces mixed greens
- ½ red onion sliced
- ½ cup roasted almonds chopped
- 2 cups watermelon chunks cut into ¾ in squares
- 3 ounces goat cheese crumbles
- ¾ cup cherry tomatoes halved
- ¼ cup honey basil vinaigrette
For the honey basil vinaigrette
- ¼ cup + 1 tablespoon olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon + 2 teaspoons honey
- small handful of basil
- pinch of kosher salt
Make the dressing: Combine all the ingredients and blend with an immersion blender or in a small food processor.
Assemble the salad: In a large salad bowl, add the mixed greens. Add the red onion, roasted almonds, watermelon chunks, goat cheese crumbles, and cherry tomatoes.
Drizzle on some of the honey basil vinaigrette, then toss the salad until combined. Don't overdress the salad. You don't have to use all of the vinaigrette!
