Gluten-Free Dairy-Free Yellow Cake

This gluten-free dairy-free yellow cake with chocolate buttercream is soft and fluffy!

INGREDIENTS

For the cake:  – vegetable oil  – sugar  – brown sugar  – vanilla extract  – eggs  – all-purpose gluten-         free flour  – baking powder  – baking soda  – kosher salt  – unsweetened almond          milk  – apple cider vinegar

INGREDIENTS

For the frosting:  – vegan butter  – powdered sugar  – Dutch cocoa powder  – unsweetened almond          milk

Stir almond milk & vinegar together.  Set aside.  Beat oil, sugar, brown sugar & vanilla until combined.

Add eggs, beating well after each addition. Add flour, baking powder, baking soda & salt to the batter. Beat until well combined.

Add almond milk mixture to the batter & beat until incorporated.

Divide the cake batter between two greased cake pans. Bake until the tops are golden brown.

Begin the frosting by whipping the butter for 30 seconds.

Add 1 c of powdered sugar & 1 tbsp of almond milk. Beat for 30 seconds. Repeat until incorporated.

Add cocoa powder & the last 2 tablespoons of almond milk. Beat until incorporated.
