Ingredients:

Combine the olive oil, apricot jam, dijon mustard, and lemon juice in a food processor.

Pulse until the mixture is thick, smooth, and creamy.

In a large bowl, combine the arugula, parm, red onion, cranberries, & pistachios.

Pour the lemon vinaigrette onto the salad and toss until coated.
