SALAD RECIPE

This healthy peach salad is the perfect bite for summer! Greens, peaches, and feta are tossed in a citrus vinaigrette for a delicious lunch or dinner.

This healthy salad is super easy to make! You can use microwaveable quinoa for a quick shortcut.

Ingredients:

Lemon Apricot Vinaigrette

Mixed greens

Sliced peaches (or strawberries)

Walnuts

Golden raisins

Feta cheese

Cooked quinoa

Red onion

In a small food processor, pulse the olive oil, lemon juice, apricot jam, and kosher salt. Set aside.

In a large bowl, combine greens, peaches, walnuts, golden raisins, feta cheese, cooked quinoa, and sliced red onion.

Drizzle half the dressing on top, then toss. Add the remaining dressing and toss again.

Enjoy immediately! If you don't have fresh peaches, you can use strawberries instead.
