- ⅓ cup sugar
- ¼ cup brown sugar
- ½ cup vegetable oil
- ¾ cup mashed banana
- 2 eggs, large
- 1 ¼ cup Bob's Red Mill 1:1 All Purpose Gluten Free Flour
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
- ¾ cup semisweet chocolate chips plus extra for tops
Preheat oven to 350 degrees Fahrenheit. Grease a muffin tin and set aside.
In a large bowl combine oil, both sugars, and mashed banana. Stir well.
Add the eggs and mix until incorporated.
Add the flour, baking powder, baking soda, and kosher salt to the batter. Stir well until a batter forms.
Stir in the chocolate chips.
Scoop the batter into the muffin tin all the way to the top of each hole. You should get 9 muffins total.
Bake until the tops are golden brown and a toothpick comes out clean, about 24 to 25 minutes.
