- 1 pound pan seared shrimp
- 5 ounces mixed greens
- ½ red onion thinly sliced
- ⅓ cup apple cider vinegar
- ⅓ cup water
- 2 teaspoons honey
- 1 radish thinly sliced
- 1 pint cherry tomatoes halved
- 4 ounces crumbled feta
- 1 avocado diced
- handful multigrain tortilla chips crushed
- green goddess dressing
In a small bowl, stir the water, honey, and vinegar until combined. Add the red onion and let sit for at least 20 minutes.
In a large bowl, combine the mixed greens, shrimp, sliced radish, cherry tomatoes, feta, tortilla chips, and avocado. Drain the red onions and add them too.
Add green goddess dressing and toss to combine. Enjoy immediately.
