Spinach Pasta

This quick and fresh spinach pasta is coated in garlic butter and tossed with white beans, golden raisins, and parmesan. It's light, delicious, and easy to make!

- 12 ounces penne pasta (gluten-free or regular)
- 2 tablespoons unsalted butter
- 2 garlic cloves minced
- ½ lemon juiced
- 3 large handfuls of spinach
- ¾ teaspoon kosher salt (If you only have table salt, cut the amount in half)
- 15 ounce can of white beans drained and rinsed
- ⅔ cup golden raisins
- ¾ cup shredded parmesan
Cook the pasta according to the package directions until al dente. Drain but reserve ½ cup of pasta water for the recipe.
In a large skillet over medium heat, melt the butter. Add the garlic and cook for 30 seconds, or until fragrant.
Add the pasta water and lemon juice. Let the mixture cook for 30 seconds, then add the spinach and kosher salt. Stir and cook until all the spinach is wilted.
Add the white beans, golden raisins, and parmesan. Stir and cook until all the parmesan is melted.
Scoop pasta into a bowl, then sprinkle with golden raisins and a squeeze of fresh lemon juice!
