Strawberry Popsicles

Sweet, refreshing, and bursting with real strawberry flavor - these popsicles are the perfect treat for summer. They're easy to make with just three simple ingredients.

Equipment

  • Popsicle Mold
  • Saucepan
  • Immersion blender or regular blender

Ingredients
  

  • 3 cups frozen strawberries see note for fresh
  • cup passion fruit juice I used Cere's brand
  • 3 tablespoons maple syrup see note

Instructions
 

  • Combine the strawberries, passion fruit juice, and maple syrup in a medium saucepan.
  • Bring the mixture to a boil over medium-high heat. Reduce the heat to medium and cook for 10 minutes, stirring occasionally.
  • Use a stick blender to blend the strawberries until the mixture is smooth. If you don't have a stick blender, transfer the mixture to a blender and blend until smooth.
  • Remove any excess foam from the mixture, then pour it into popsicle molds and freeze overnight.

Notes

You can use fresh strawberries! Just hull them first. 
These pops are not overly sweet. For a sweeter pop, increase the amount of maple syrup by a tablespoon or two.
