    3-Ingredient Strawberry Popsicles

    Sweet, refreshing, and bursting with real strawberry flavor - these strawberry popsicles are the perfect treat for summer. They're easy to make with just three simple ingredients.

    Fresh Strawberry Pops

    There's nothing I love more than a melty strawberry pop on a hot summer day! Unless of course it's poolside.

    I love Outshine brand popsicles, but they're not cheap! So I decided to pull out my popsicle mold and make my own.

    These strawberry popsicles are like summer on a stick! They capture the sweet, juicy taste of strawberries in a hand-held frozen treat.

    Key Ingredients

    • Strawberries - You can use fresh or frozen. Your pops will only be as good as your strawberries, so make sure they're deep red and sweet. If it's not strawberry season, I recommend buying them frozen.
    • Passion fruit juice - I love love LOVE Cere's brand! It's 100% juice without loads of added sugar or corn syrup. And it tastes refreshingly sweet. I use it in smoothies, pops, and drinks. If you can't find it at the grocery store, you can find it at World Market.
    • Maple syrup - For a little extra sweetness! I prefer my popsicles on the sweet-tart side. If you prefer less tart, sweeter pops, add a bit extra!

    How to Make Strawberry Popsicles

    These popsicles are super easy!

    • Combine the ingredients in a saucepan. There's no need to dice the strawberries. Just cut off the tops and remove the white core from the center of the strawberries.

    • Simmer until the strawberries break down and the flavors intensify.
    • Blend the mixture until it's smooth. Don't go crazy or you'll get a lot of foam. Use a spoon to remove any excess foam.
    • Pour the mixture into popsicle molds and freeze overnight.

    Juice & Sweetener Variations

    • Juice - If you can't find passion fruit juice, swap it with apple or white grape juice. Both of these juices won't overpower the flavor of the strawberries, but taste sweet and refreshing!
    • Sweetener - I used maple syrup, but honey works fine too! Before you pour the mixture into molds, give it a little taste. If you prefer a sweeter popsicle, add more sweetener until you achieve the desired sweetness level.

    Helpful Tips

    • If possible, use a silicone mold for the popsicles. The reason I recommend silicone is because it's bendable which makes removal easier! I can use my hands to push the pops up from the bottom of the mold.
    • If the pops won't come out, try leaving them on the counter for a few minutes to thaw slightly. If that doesn't work, you can try running the mold under warm water for 15 to 30 seconds. Be careful not to melt the pops!

    Storage Tips

    • Remove the popsicles from the mold and place them in a zip-top freezer bag. Freeze for up to 3 months.
    • Use a permanent marker to label the bag with the date so you know when they were made.

    Equipment

    • Popsicle Mold
    • Saucepan
    • Immersion blender or regular blender

    Ingredients
      

    • 3 cups frozen strawberries see note for fresh
    • 1¼ cup passion fruit juice I used Cere's brand
    • 3 tablespoons maple syrup see note

    Instructions
     

    • Combine the strawberries, passion fruit juice, and maple syrup in a medium saucepan.
    • Bring the mixture to a boil over medium-high heat. Reduce the heat to medium and cook for 10 minutes, stirring occasionally.
    • Use a stick blender to blend the strawberries until the mixture is smooth. If you don't have a stick blender, transfer the mixture to a blender and blend until smooth.
    • Remove any excess foam from the mixture, then pour it into popsicle molds and freeze overnight.

    Notes

    You can use fresh strawberries! Just hull them first. 
    These pops are not overly sweet. For a sweeter pop, increase the amount of maple syrup by a tablespoon or two.
