Toaster Oven Sweet Potatoes with Maple Butter

Toaster oven sweet potatoes are buttery soft inside with a lightly crisped skin. Finished with a swirl of cinnamon maple butter, they’re irresistibly delicious and naturally sweet.

Ingredients
  

  • 2 large sweet potatoes
  • coconut oil, olive oil, or melted butter

For the maple butter:

  • 3 tablespoons unsalted butter softened
  • tablespoons maple syrup
  • ¾ teaspoon ground cinnamon
  • pinch kosher salt

Instructions
 

  • Preheat toaster oven to 400 degrees Fahrenheit. 
  • Line the pan for the toaster oven with aluminum foil. Set aside. 
  • Cut the ends off of the sweet potatoes. Place the sweet potato on it’s flat end so it’s standing up and carefully cut it into three equal slices. 
  • Place all six slices flat on the prepared pan, giving a little bit of space between them. Brush the tops of the sweet potatoes with oil or butter and sprinkle with kosher salt. 
  • Bake for 30 to 35 minutes, or until the sweet potatoes are soft and fork-tender. 
  • Meanwhile, make the maple butter. In a medium bowl, combine the softened butter, maple syrup, cinnamon, and kosher salt. Beat well with a spoon. Set aside. 
  • Serve the baked sweet potatoes warm with maple butter on top. If you have leftover maple butter it will last in the fridge for 2 weeks. 
  • Note: If you like your maple butter on the sweeter side, add a teaspoon or two of powdered sugar.
