Toaster oven sweet potatoes are buttery soft inside with a lightly crisped skin. Finished with a swirl of cinnamon maple butter, they’re irresistibly delicious and naturally sweet.
I love a perfectly baked sweet potato, but waiting over an hour for it to cook is the worst. That’s why I’m obsessed with baked sweet potatoes in the toaster oven!
I cut them into slices first so they cook quickly, then top them with a cinnamon maple butter. They bake in 30 minutes with very little hands-on time!

Key Ingredients
- Sweet potatoes - I used two medium sized sweet potatoes. Thicker slices may take a few extra minutes to cook all the way through.
- Oil - You can use whatever you like to brush the sweet potatoes with - olive oil, coconut oil, or butter.
- Unsalted butter - For the cinnamon butter! If you only buy salted butter, that's fine too! Just omit the salt from this recipe.
- Maple syrup - My favorite sweetener! If you don't have it, honey works great too. For a sweeter maple butter, add a teaspoon or two of powdered sugar.
- Cinnamon - For the warm cinnamon flavor!
How to Bake Sweet Potatoes in the Toaster Oven
You can bake sweet potatoes in the toaster oven. While you can bake them whole, I don't prefer it because it takes a long time!
This is how I do it:
- Cut the ends off of the sweet potatoes and then cut each one into three slices. You don't need to peel the sweet potatoes, but you can if you like. The peels get a little bit crispy/chewy in the oven.
- Brush the sliced sweet potatoes with butter or oil (either is fine!), then bake until they're soft and fork-tender, roughly 30ish minutes.
- While the potatoes cook, make the maple butter. The butter should be soft so it's easy to mix with a spoon!
- Serve the sweet potatoes warm with maple butter on top!
Expert Tips
- Cutting the sweet potatoes into slices helps them cook quickly and evenly! Three slices from each potato works perfectly.
- You can bake a whole sweet potato in your toaster oven too. I find the best method is to poke the sweet potatoes with a fork, then wrap each one in aluminum foil. Place them on the pan and bake until fork-tender, about 60 to 70 minutes.
Storage
- Store leftover baked sweet potatoes in an airtight container in the fridge for up to 4 days.
- You can reheat them in the microwave until hot throughout. Top with more butter and enjoy!

Toaster Oven Sweet Potatoes with Maple Butter
Equipment

Ingredients
- 2 large sweet potatoes
- coconut oil, olive oil, or melted butter
For the maple butter:
- 3 tablespoons unsalted butter softened
- 1½ tablespoons maple syrup
- ¾ teaspoon ground cinnamon
- pinch kosher salt
Instructions
- Preheat toaster oven to 400 degrees Fahrenheit.
- Line the pan for the toaster oven with aluminum foil. Set aside.
- Cut the ends off of the sweet potatoes. Place the sweet potato on it’s flat end so it’s standing up and carefully cut it into three equal slices.
- Place all six slices flat on the prepared pan, giving a little bit of space between them. Brush the tops of the sweet potatoes with oil or butter and sprinkle with kosher salt.
- Bake for 30 to 35 minutes, or until the sweet potatoes are soft and fork-tender.
- Meanwhile, make the maple butter. In a medium bowl, combine the softened butter, maple syrup, cinnamon, and kosher salt. Beat well with a spoon. Set aside.
- Serve the baked sweet potatoes warm with maple butter on top. If you have leftover maple butter it will last in the fridge for 2 weeks.
- Note: If you like your maple butter on the sweeter side, add a teaspoon or two of powdered sugar.
