High Fiber Cookies with Oatmeal

INGREDIENTS:

Butter

Brown & white sugar

Egg + yolk

Flax meal

Oat flour

Baking soda

Kosher salt

Rolled oats

Sliced almonds

Chia seeds

Plenty of dietary fiber.

These high fiber cookies are addictively tasty, perfectly chewy, and packed with fiber! They feature oats, chia seeds, sliced almonds, and chocolate chips.

Preheat oven to 350 degrees Fahrenheit. Combine butter, sugar, and brown sugar in a bowl.

Beat on medium speed until the mixture is light and fluffy, about 3 minutes or so.

Add the egg and yolk to the butter mixture. The extra yolk makes the cookies extra moist and chewy!

Beat until incorporated. Scrape down the sides of the bowl with a spatula.

Add the flax meal, oat flour, baking soda, and kosher salt. Beat until incorporated.

Add the rolled oats, sliced almonds, chia seeds, and chocolate chips. Beat until a cookie dough forms.

Use a small cookie scoop to scoop 8 cookies onto a parchment lined sheet pan. Bake for 12 minutes.
