Ingredients:

Brown sugar

Unsalted butter

White sugar

Egg

Almond flour

Rolled oats

Baking soda

Kosher salt

Preheat oven to 350 degrees. Cream butter & sugars until light and fluffy.

Add the egg and beat until incorporated. Scrape down the sides of the bowl with a spatula.

Add the almond flour, oats, baking soda, and kosher salt to the bowl. Mix well until a cookie dough forms.

Using a small cookie scoop, scoop 8 cookies onto the sheet pan. Give them space to spread.
