These oatmeal cookies are easy to make with these easy-to-follow steps!

Ingredients:

Brown sugar

Unsalted butter

White sugar

Egg + yolk

Vanilla

Oat flour

Rolled oats

Cinnamon

Baking soda

Kosher salt

Preheat oven to 350 degrees. Line two sheet pans with parchment paper.

In the bowl of a stand mixer, beat the butter, sugar, and brown sugar until light and fluffy

Add the vanilla, egg, and yolk to the butter mixture, then beat until combined.

Add the oat flour, oats, cinnamon, baking soda, and kosher salt to the butter mixture. Beat until combined.

Use a small cookie scoop to scoop 8 cookies onto each prepared sheet pan. Give them space!

Place the sheet pans in the oven and bake for 11 minutes, or until the edges are golden brown.
