Gluten Free Potato Soup

Ingredients

– onion – carrots – celery stalks – yukon gold potatoes – bacon – unsalted butter – garlic cloves – chicken broth – whole milk – heavy cream – parmesan cheese – gluten free all-purpose flour – kosher salt

In a Dutch oven on med heat, cook the chopped bacon until crispy. Transfer bacon to a paper towel lined plate.

Add butter to bacon grease.  Add carrots, celery & onion.  Sauté until translucent. Add the minced garlic & cook for 30 seconds.

Stir in flour.  Add broth, potatoes & salt.  Bring to a boil.  Reduce heat & simmer until potatoes are tender.  Stir occasionally.

Stir in milk, cream & parmesan cheese.  Cook 3 more minutes. Use an immersion blender to blend to desired thickness.
