King Arthur Measure for Measure Gluten Free Flour is one of the brands that stands above the rest. It's currently my second favorite brand.
It makes gluten-free baking a breeze! It combines a mixture of alternative flours, starches, and xanthan gum to mimic the results of regular flour. I never have to wonder if a recipe is going to come out right when I use it.

What is the trick to baking with gluten free flour?
While there's not one simple trick to cure all your gluten-free baking woes, there are a few that help a ton!
- Start with a good quality gluten-free all-purpose flour that includes xanthan gum. Gluten-free all-purpose flour blends are a mixture of alternative flours and starches. Each brand reacts differently in recipes, and tastes different too! I highly recommend Bob's Red Mill's 1:1 Gluten Free Baking Flour or King Arthur's Measure for Measure Gluten Free Flour.
- Look for recipes that call specifically for the brand of gluten-free flour you're using. This way if the recipe doesn't come out right, you know it was the recipe and not the flour you used.
- Certain brands swap better than others. For example, I've found Bob's Red Mill and King Arthur to swap for each other well in recipes. But Cup4Cup and Bob's Red Mill don't swap well. For this reason, it's best to find a recipe specifying the brand of flour they used.
- Do not swap one-ingredient alternative flours for gluten-free all-purpose flour blends. For example, if a recipe calls for gluten-free all-purpose flour, do NOT swap in almond flour or coconut flour. They're not a 1:1 substitute and the recipe won't come out right. Instead look for a recipe that calls for almond flour.
