This healthy apple crisp is perfect if you apple pick religiously! We go every year and this crumble is what follows! I like to use Fuji, Honeycrisp, or a combination of apples.

Apples: Any apple variety works, but a sweeter variety requires less sugar. I used Fuji apples, but Gala, Honeycrisp, and Pink Lady are great options. Granny smith apples will result in a much tarter filling.
Tapioca flour: Tapioca flour acts as a thickener for all the juices in this recipe. Cornstarch should work fine too.
Cinnamon: Cinnamon and apples are the perfect match! Apple pie spice is a great substitute too.
Maple syrup: A small amount of maple syrup adds the perfect sweetness for this crisp recipe.
Lemon juice: For best results, use fresh-squeezed lemon juice. It has a bright, acidic flavor that complements the sweetness of the apples.

Coconut sugar: Coconut sugar has a caramel-like sweetness to it! Brown sugar works too.
Maple syrup: Maple syrup is less processed than white sugar and it contains minerals and antioxidants. It pairs perfectly with apples.
Salt: Don't forget the salt. It enhance all the sweet flavors.

This healthy apple crumble with oats is incredibly simple to whip up. Here's how:
Preheat the oven: Preheat the oven and spray your baking dish.
Combine ingredients: In a large bowl, combine the ingredients for the apple filling.

Ingredients
For the filling:
- 5 Fuji apples, peeled & chopped
- 1 tablespoon tapioca flour
- ½ teaspoon ground cinnamon
- 2 tablespoons maple syrup
- 2 tablespoons fresh lemon juice
- ¼ teaspoon kosher salt
For the topping:
- ¾ cup almond flour
- 1 cup old-fashioned oats
- 2 tablespoons coconut sugar
- 2 tablespoons maple syrup
- ¼ teaspoon kosher salt
- ⅓ cup coconut oil
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Spray an 8 by 8-inch baking dish with nonstick spray. Set aside.
- In a large bowl, combine the chopped apples, tapioca flour, cinnamon, maple syrup, lemon juice, and kosher salt. Toss until well combined.
- Pour the apple mixture into the greased baking dish.
- In a separate bowl, combine the almond flour, rolled oats, coconut sugar, maple syrup, salt, and coconut oil. Use your hands to mix it together until it forms a crumble.
- Evenly top the apples with the crumble. Place the dish on the center rack of the oven and bake for 30 minutes.
- Carefully tent the apple crumble with foil and then bake another 35 minutes, or until the apples are soft.
- Serve warm!

Since becoming gluten free almost 10 yrs ago I have madd a LOT of fruit crisps. I even tried this one before but did not have the coconut sugar or almond flour so I substituted maple syrup and gf baking mix. The original recipe is the best!! I did add 1 Tbl of coconut sugar and 1 tsp if vanilla extract to my apples. I also double the cinnamon making sure it is in the crumble mix and apples. I definitely will make this again.
