This peach blueberry fruit salad is so bright and fresh with peak-season peaches and sweet blueberries! It's a simple fruit salad that screams summertime!
Peak-Season Peaches:
Summer equals peaches and I'm so here for it! I'm addicted to peak-season, juicy, nectarously sweet peaches.
Because I love them so dearly, it's hard for me to bake with them. Before I can wield a whisk, I've devoured them all.
For this reason, I wanted to create a recipe that highlights the beauty of fresh peaches! And this peach blueberry salad does just that!
It's bright, sweet, fresh, and simple!
Essential Ingredients:
- Blueberries - Blueberries and peaches are both in season in the summertime and they taste amazing together!
- Peaches - Look for peaches with vibrant orange or red skin. It's okay if the peaches are firm in the store. Just set them on the counter for a day or two until they give when pressed gently.
- Peach jam - Adds a punch of extra peachy flavor to the fruit salad.
- Orange and lemon - A pop of citrus brightens everything up! I highly recommend fresh lemon juice over bottled.
- Mint - Adds a sweet herby flavor. I used 10 leaves from my garden. You can use more if you like a stronger mint flavor.
How to Dice a Peach:
There's more than one way to properly dice a peach. But this way is super simple!
- Cut all the way around the peach lengthwise. See the picture for reference.
- Use your hands to twist both sides in opposite directions. You should have two peach halves now.
- Use your fingers to push the pit out. If it's stuck, you can carefully use a knife to pop it out.
- If you want to remove any remnants of the pit, use a spoon to scoop out the red part.
- Cut each half into slices.
- Cut those slices into chunks! You're done!
How to Make Peach Fruit Salad:
Once you cut up your peaches, this summer fruit salad comes together in a snap!
- Make the dressing. In a medium bowl, whisk the peach jam, orange juice, lemon juice, and mint.
- Combine with fruit. In a large bowl, combine the diced peaches and fresh blueberries. Pour the dressing on top.
- Toss everything together. Use a large spoon to gently toss the fruit with the dressing.
Variations:
- Fruit - You can swap half or all the blueberries with fresh strawberries!
- Mint - If you don't like mint, you can leave it out or try swapping it with fresh basil.
- Sweetness - I find this fruit salad plenty sweet, but if you want it sweeter, add a couple teaspoons of honey or maple syrup to the dressing.
Storage:
Peach fruit salad is best the day it's made, when the fruit is firm but juicy!
If you do have leftovers, store them in an airtight container in the fridge for up to 3 days.
