- Strawberries - Peak-season strawberries are the best! But you can make this in the off-season too and it's still delicious.
- Sugar - You can omit the sugar if you want, or swap it with maple syrup or honey. Just taste the mixture before you pour it into the baking dish.
- Whipped cream - I used Reddi Whip extra creamy whipped topping. The contrast with the icy granita is SO delicious.
How to Make a Strawberry Granita:
This granita is SO simple! It takes only 10 minutes of hands-on time. Just make sure you plan to be home for the day.
- Blend: Blend the strawberries, juice, and sugar until smooth. It should be thin like juice, but smooth.
- Pour: Taste the mixture to see if you like the sweetness level. Pour the juice into a large glass baking dish.
- Freeze and scrape: Place the dish in the freezer for 1 hour and 20 minutes, then scrape the ice crystals with a fork. Repeat this process 3 times.
- Macerate: Meanwhile, macerate the diced strawberries in a bowl with some sugar. Let them sit.
- Assemble: Scoop the granita into bowls, top with whipped cream and strawberries. Enjoy!
What brand of passion fruit juice should I use?
I highly recommend Cere's brand for passion fruit juice! It's a 100% juice blend and it tastes delicious. Many brands are loaded with added sugar and I try to avoid those ones. If you can't find one, look for another similar 100% juice blend.
Storage:
Transfer the granita to an airtight container with a lid and freeze for up to a week.
Use a fork to break up the ice crystals again and assemble with toppings as desired!

Ingredients
For the granita:
- 1 quart strawberries, hulled

- 2 tablespoons sugar see note
For the macerated strawberries:
- 1½ cups small diced strawberries
- 1½ teaspoons sugar
Optional:
- whipped cream
Instructions
- In a high-speed blender, combine the strawberries, passion fruit juice, and 2 tablespoons of sugar. Blend until the strawberries are completely pulverized and the mixture is smooth.
- Pour the mixture into a 9x13 glass baking dish. Place the baking dish in the freezer for 1 hour and 20 minutes.
- Use a fork to break up any ice crystals that have formed. Repeat this process 2 more times for a total of 4 hours in the freezer or until the mixture is frozen.
- In a medium bowl, combine the diced strawberries and sugar. Let sit for at least 10 minutes.
- To assemble the granitas: Scoop the granita into small bowls, then top with whipped cream and macerated strawberries.
